HEALTHY SWEET POTATOES WITH CRUNCHY VEGETABLES

Ingredients used in HEALTHY SWEET POTATOES WITH CRUNCHY VEGETABLES
• Pineapple juice - 1 cup.
• Vinegar - 1/2 tea spoon.
• Soya sauce - 1-2 tablespoons.
• Lime juice - 1 tea spoon.
• Honey - 1 tea spoon.
• Ginger(finely chopped) - 1/2 tea spoon.
• Fresh red chillies(chopped) - 1 cups.
• Potatoes(pieces) - 1 cup.
• Cucumber(pieces) - 1/4 cup.
• Onion - 1 numbers.
• Green bell pepper - 1 number.
• Fat free tomato ketchup - 1 tablespoon.
• Cherry tomatoes - 1/2 cup.
• Corn slurry - 1 tablespoon.
Method:
  • Take a bowl and add pineapple juice, vinegar, soya sauce, lime juice, honey and mix nicely.
  • Take a pan and add ginger and saute it, later add fresh red chillies, pineapple juice mixture, potatoes, cucumber, onion, green bell pepper, tomato ketchup, cherry tomatoes, corn slurry and mix nicely and cook it.
  • Check for seasoning and transfer into a plate.

Now healthy sweet potatoes with crunchy vegetable is ready to serve.
