1.cook lobster in boiling salted water.
2.remove from shell and cut into 2.5cm.pieces. keep hot.
3.melt butter over hot water.add chopped parsley and lime juice,salt,pepper and cayenne.
4.thicken with egg yolks.
5.put mustard into a bowl.add sauce slowly,stirring allthe time till it has a smooth creamy texture.keep it warm.
6.place lobster pieces in ahot serving dish.cover with sauce and decorate with slices of lemon and hard-boild egg.serve hot.
