Ingredients used in kajju katri
• Sugar - 3/4 cup.
• Roasted cashew nuts powder - 1 cup.
• Water - 1/2 cup.
Hello Chef Fry the cashew nuts till they loose their moisture, and dont allow them to turn brown, so just fry them in medium hot flame so that the moisture is lost. After few minutes when the nuts break with a craking sound in between ur fingures , then grind them in a blender to soft powder. Now keep a hard bottomed pan on flame and put water and sugar into the pan.When the sugar attains a single string to 1 1/2 string (depends on the sugar quality) stage, remove it from heat and start adding the cashew powder to it, and keep stirring, in no time it will form into a poori dough, now on a neat surface we can role it into a chappati and can cut into pieces. u can decorate it with pistachio or badam bits.Why I said depends on sugar quality is in India the sugar we get is coarse type which requries 2 strings but in UK the sugar I get is fine powder kind, so I regulary do this sweet at 1 sting stage.So please try this sweet , for those who r cashew lovers will definetely enjoy this sweet.
