Ingredients used in Kokum Sherbet
• Citric acid - 3/4 teaspoons.
• Sugar - 2 cup.
• Thick juice of kokum - 1 cup.
• Sodium benzoate - 1/4 teaspoons.
Method:
  • Put juice and sugar in a deep vessel.
  • Heat and stir gently till sugar dissolves.
  • Bring to a boil, simmer for 2-3 minutes. Switch off the flame and cool it.
  • Add sodium benzoate and mix well.
  • Pour into sterilized sauce bottles, and seal.

Serve it chill.

Hi, I am from Assam and I do not know what is kokum. I know that kokum originates in Goa, in India and I had kokum curry in Goa too. I think it is a mistake to put Kokum Sherbet under Assam's category. Its misleading.
