Ingredients used in Kummas (Fudge or Burfi)
• Eggs, lightly beaten - 4 numbers.
• Shortening - 5 tablespoons.
• Sugar - 2 cup.
• Cream of wheat - 1 cup.
• Wheat flour - 1 cup.
• Baking powder - 1/2 teaspoons.
• Silvered almonds - 2 tablespoons.
• Cardomom powder - 1/4 teaspoons.
• Caraway seeds or kala - 1 teaspoons.
• Yogurt or curd, plain - 1 cup.
• Milk - 1/2 cup.
• Saffron threads - a pinch.
Method:
Mix eggs, shortening and sugar in a 2 quart bowl. cream of wheat, wheat flour, baking powder, almonds, cardomom and caraway seeds. Then add yogurt and milk, and saffron. Mix well and pour the mixture into a 9 x 13 baking dish and let stand for 3 hours at room temperature. Then bake in 350- F preheated oven for one hour. Cool slightly before cutting into pieces. Serves 6 to 8.
