Ingredients used in Kuzhi Paniyaram(
• 1 cup parboiled rice - 1 cup.
• Urad dal - 1/4 cup.
• Jaggery - 1 cup.
• Ghee - to fry.
• Salt - to taste.
wash urad and rice soak 3 hours. drain and grind thick batter.add salt and beat with your hand to facilitate fermentation. cover the bowl and leave to ferment full night. The following morning, the fermented batter will be frothy. stir it well and add grated jaggery. Place the paniyaram pan wok over medium heat. when hot 1/4 spoon of ghee in each depression. Fill half of each depression with the batter. Cook the paniyaram over low heat for 2 minutes. Gently turn the paniyaram with a skewer and cook the other side for 2 minutes, till golden. serve to hot
