Ingredients used in LAUKI KHEER WITH CUSTARD
• Bottle gourd - 1 number.
• Chironji - 1 tablespoon.
• Cashew nuts - 10 numbers.
• Milk - 2 cups.
• Sugar - 1/2 cup.
• Custard powder - 1-2 tablespoons.
• Chia seeds - 1 tablespoon.
• Ghee - 2 tablespoons.
Method:
Peel the bottle gourd and grate it. Add custard powder in little milk and mix thoroughly without any lumps. Heat ghee in a pan and add chironji, cashew nut and saute it and remove little quantity into a plate for garnish. In the same pan add grated bottle gourd and saute it for 1 minute. Add little water and cook it for 2 minutes by placing the lid on it. Add sugar, milk and boil it. When the milk starts boiling add custard mixture and mix thoroughly. When the mixture thicken switch off the flame and add chia seeds soaked in water for 10 minutes. Now the lauki kheer is ready to serve or you can keep in the refrigerator and serve it cool.
