Ingredients used in MALAI KULFI
• Milk - 1000 ml.
• Cardamom powder - 1/4 tea spoon.
• Sugar - 1/2 cup.
• Saffron - 1 pinch.
• Whipping cream - 1 tablespoon.
Method:
  • Heat pan, boil milk for 20-25 minutes until it reduced to half of its quantity, color is changed and malai is formed.
  • Add cardamom powder, once it is reduced to 60 or 70 percent add sugar and boil it again until it is reduced by half and becomes thick consistency.
  • Remove from flame, add saffron and pour into glass jar, allow it rest for some time.
  • Once it is cool add whipping cream and mix nicely and pour it into kulfi moulds and place lid, keep it on a plate.
  • Insert thin stick and keep in the freezer for about 5 hours.
  • Now demould into a plate and serve it cool.
