Ingredients used in Mediterranean Crostini
• Loaf crusty italian bread - 8 slice.
• Small cherry tomatoes packet - 1 numbers.
• Ripe zucchini, finely diced - 1 numbers.
• Green onion, chopped - 3 numbers.
• Ripe olives, either black or green - 10 numbers.
• Chopped capers - 1 tablespoons.
• Olive oil - 4 tablespoons.
• Salt & pepper - to taste.
• Basil leaves - 5 large.
• Grated pecorino cheese - to taste.
Method:
Mix all the chopped ingredients together with the seasonings, and let sit a minimum of one hour to let the flavors meld. Over medium heat, grill lightly both sides of the bread slices. Spoon over a scoop of the tomato mixture over each slice, sprinkle on some cheese, garnish with fresh basil leaves and serve
