Ingredients used in Methi Prawns
• Spring onions (chopped ) - 6 numbers.
• Garlic (chopped ) - 10 clove.
• Mango powder (amchur) - 1/4 tea spoon.
• Red chili powder - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Garam masala powder - 2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Green cardamom seeds - 1/2 tea spoon.
• Fennel seeds - 1/2 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Kasoori methi/dry fenugreek leaves - 2 tablespoons.
• Fresh fenugreek leaves (chopped ) - 1 bunch.
• Medium sized prawns - 20 numbers.
• Small red pepper (finely chopped ) - 1 numbers.
• Tomato puree - 1 tablespoon.
• Yogurt - 4 tablespoons.
• Salt - to taste.
• Oil - 4 tablespoons.
• Fresh coriander leaves (chopped ) - 2 tablespoons.
Method:
  • Heat cooking oil in a deep pan, add all the seeds (fenugreek seeds, green cardamom seeds, fennel seeds, mustard seeds, cumin seeds) and saute it.
  • When seeds start to splutter, add garlic and spring onions, stir fry until golden brown.
  • Add garam masala, turmericpowder, red chili powder and stir for a few seconds.
  • Add chopped red pepper and continue to stir for a couple of minutes.
  • Then add tomato puree and yogurt stir, well and bring it to boil.
  • Add salt, prawns, fresh and dried fenugreek leaves, stir and cook on medium heat until prawns are cooked.
  • To it, add garam masala powder and stir gently.
  • Garnish with chopped coriander leaves.

Serve hot with naan or Tandoori roti.
