Ingredients used in Methi pulao
• Green chilles - 5 numbers.
• Ginger/garlic - as per to taste.
• Basmathi rice - 2 cups cup.
• Methi leaves fresh/frozen - 1 bunch/3cubes bunch.
• Whole garam masala - as per taste fl. oz..
• Onion - 1 med numbers.
• Salt to taste - as per taste to taste.
• Turmeric - half teaspoon pinch.
Method:
Clean and wash methi leaves from bunch and cut coarsely.If using frozen thaw for sometime.Soak rice in water for 15 mins. Grind to paste onion,chillies ,ginger and garlic.(add water if needed).In a pan take 2 tps oil and saute whole garam masala. Add the paster to it and fry on medium heat.Keep stirring to avoid burning. After the raw flavor has gone add the washed methi leaves (raw) .Now again keep stirring for a while say 5 mins. The methi kind of gets cooked.Add turmeric to this mixture now.Drain water from rice and fry it with the mixture for sometime. Transfer this to pressure cooker bowl.Add about 3 and 3/4 cups of water to it.Add 2 tps of oil.Add salt.Stir and pressure cook for 3 whistles or till rice is done.
