Ingredients used in OEUFS NOYES
• Water - 2500 ml.
• Onions - 200 grams.
• Leeks(white part only) - 4 numbers.
• Garlic - 1 numbers.
• Eggs - 4 numbers.
• Bread - 4 slice.
• Thyme - pinch.
• Salt and pepper - to taste.
• Saffron - pinch.
• Oliveoil - 1 tablespoons.

1.chop up onions and leeks and put them in cold water.

2.add well-crushed garlic,thyme,saltand pepper.

3.put lid on pan and boil for 20 minutes.

4.put in a pinch of saffron and olive oil and boil for another 5 minutes.

5.carefully break each egg into this soup and let it poach,removing each when it is done.keep warm.

6.fry each piece of bread crisply brown in olive oil.

7.warm 4 deep,wide soup a piece of bread in each, an egg on each piece of bread and pour soup over.
