Ingredients used in Okra Masala
• Besan flour - 3 tablespoons.
• Kasoori methi - few .
• Cream or milk - half cup.
• Tomatoes - 1 numbers.
• Onion - 1 numbers.
• Butter - 2 teaspoons.
• Cumin seeds - 2 teaspoons.
• Whole g.masala - few .
• Coriander owd - 3 tablespoons.
• Redchilli pwd - 4 tablespoons.
• Cumin pwd - 8 teaspoons.
• Okra - 10-11 numbers.
• Rice flour - 2 teaspoons.
• Salt - taste .
• Oil - .
• Chat masala - little .
• Ging-garlic paste - 2 tablespoons.
• Cashews - 4 numbers.
FIRST PREPARING FRIED OKRA ---------------------------------------- 1)Slit the okra into really thin pieces 2)In a bowl add besan flour,rice flour,salt,2 tsp of oil,chat masala,chilli pwd(little),garammasala(little)coriander and cumin pwd(little) 3)put the slitted okra in it and mix really well.....(Important :do not add water.... Okra will coat itself with the flour with the help of its own moisture) 4)too much floor is not good....Okra must dust itself with the flour mixture.... Rest it for 10 mints 5)in a pan(i prefer iorn skillet..It definitley gives a different taste) Pour some oil and shallow fry this...make sure that they dont burn..cook in med flame.....(immediately transfer into another vessel)......ADD THIS BEFORE Serving... PREPARE MASALA : --------------------------- !)Pour some butter...Add little oil....add .g.masala,cashews 2)Add onion ,salt ....cook until brown add turmeric...add g-g paste...... 3)add tomatoe must get mashed.... 4)grind them well 5)in another pan addbutter,w.r.masala, cumin seeds,curry leaves(1 sprig),and add this mixture..pour little water and add cream.milk(i add milk).....cook well until oil leaves out...add kassoori methi.... 6)add cilantro................ (Prepare this mixture in med flame) JUST BEFORE SERVING ADD THE FRIED OKRA,SO THAT IT RETAINS THE CRISPINESS... GOOD FOR CHAPATHI/phulka >>>>BEST FOR CURD RICE.................
