Ingredients used in PANJIRI
• Lotus seeds - 1 cup.
• Almonds - 8-10 numbers.
• Pistachios - 6-8 numbers.
• Melon seeds - 1 tea spoon.
• Ghee - 1/2 cup.
• Dessicated coconut - 1/4 cups.
• Poppy seeds - 1 tea spoon.
• Wheat flour - 1-1/2 cup.
• Flame of fire petals - 8-10 numbers.
• Dry ginger powder - 1 tea spoon.
• Fennel powder - 1 tea spoon.
• Carom seeds - 1 tea spoon.
• Cardamom - 2 numbers.
• Sugar powder - 1/2-1 cup.
• Salt - 1 pinch.
• Gond - 2 pieces.
Method:
  • Take a pan and dry roast the lotus seeds, transfer it into a big bowl.
  • In the same pan and roast the almonds, pistachios, melon seeds with little ghee, transfer it into the big bowl.
  • Add little ghee to the same pan roast the gond, transfer it into the big bowl.
  • In the same pan add dessicated coconut, poppy seeds and transfer it into the big bowl.
  • In the same pan roast the wheat flour and transfer it into the big bowl.
  • In the same pan roast the flame of fire petals and transfer it into the big bowl.
  • Take the mixie jar and add roasted ingredients, dry ginger powder, fennel powder, carom seeds, cardamom and make the smooth powder.
  • Now transfer it into a plate and add sugar powder, melted ghee, salt and make the round laddu.

Now the nutritional panjiri laddu are ready to serve.
