Ingredients used in PINDI CHANA
• Green chilies, sliced - 2 numbers.
• Black tea leaves tied in a cheesecloth - 1 tablespoons.
• Salt - to taste.
• Finely chopped coriander leaves - to taste.
• Chickpeas (chole) - 1 cup.
• Garam masala - 1/2 teaspoons.
• Red chili powder - to taste.
• Ginger - 2 1/2 numbers.
• Oil - 2-3 tablespoons.
• Garlic, finely crushed - 2 teaspoons.
• Onions chopped - 2 numbers.
• Medium sized tomatoes, chopped - 3 numbers.
• Ground coriander - 2 teaspoons.
• Ground cumin - 1 1/2 teaspoons.
• Turmeric powder - 1/2 teaspoons.
Method:
1.Soak Chole in water overnight or for about 6 hr.
2.Cook the chole with salt and enough water in the cooker for about 20 minutes or till fully done. Drain, reserving 1 cup of cooking liquid.
3.Finely chop the remaining ginger. Heat oil and sauteacute; onions till golden, then add garlic and chopped ginger and green chilies. Sauteacute; for 5 minutes.
4.Add tomatoes, coriander, cumin, turmeric and chili powder and sauteacute; over low heat until the oil separates.
5.Add chole, the reserved cooking liquid, salt and half of the coriander leaves.
6.Simmer, uncovered until the liquid has been absorbed.
7.Add a pinch of garam masala and serve chole sprinkled with the remaining garam masala, coriander leaves and shredded ginger.
8.Serve it with hot puri.

Please do take the time to revise the recipe. There is mention of black tea-leaves in the ingredients however nowhere in the recipe it says how and when they are used.

Absolutely awesome, cmae out exactly the way I expected it to be, Now I will try this recipe with black eye peas, I think it will come out to be as good as this one.
