Ingredients used in Potato Chinese
• Potatoes (boiled but firm) - 3 numbers.
• Spring onion (chopped into 1" pieces) - 1 bunch.
• Ginger (finely chopped) - 1 tea spoon.
• Garlic (finely chopped) - 1 tea spoon.
• Red chilies (finely chopped) (fresh or dried) - 1/2 tea spoon.
• Sugar - 1/2 tea spoon.
• Soya sauce - 1 tea spoon.
• Tomato sauce - 1 tea spoon.
• Corn flour - 1 tablespoon.
• Water - 1/4 cup.
• Oil - 2 tablespoons.
• Salt - to taste.
Method:
  • Make a thin slurry of corn flour and water. Keep aside.
  • Peel and chop the potatoes into long thick chunks.
  • Heat oil in a wok or pan, add some potatoes at a time and fry till light golden brown.
  • Finish all potatoes similarly. Keep aside. Remove half the oil.
  • In the remaining oil, add the chillies, ginger and garlic. Fry for a minute.
  • Add the potatoes, sauces, salt and sugar. Stir well and add the cornflour solution. Cook till the wateriness is gone.
  • At last, add spring onions and stir. Serve hot.

Even I feel I have eaten this kind of dish somewhere. But the thing is the recipe is not explained in detail. I tried the same way but it did not taste that good. I feel something was missing in the Method :(

It is incomplete. Should potatoes be dipped in corn flour mixture first? I have eaten similar one called potatoes in Schezwan sauce.
