Ingredients used in Potle with thai red curry paste
• Shallots or onions finely sliced - 5 piece.
• Mushrooms - 1 cup.
• Ginger peeled and finely julienned - 1 slice.
• Tofu cut into small pieces - 1 cup.
• Thai red curry paste - 1 tablespoons.
• Coconut milk - 1 cup.
• Cliantro - 1 bunch.
• Vegetable oil - 2 tablespoons.
• Crispy fried onions - 4 tablespoons.
• Palm sugar - 1 tablespoons.
• Zest and lemon juice - 1 slice.
• Springroll sheets - 10 numbers.
• Chives to tie to the potle - 10 numbers.
Method:
Pan fry the tofu till it turn golden in color. In the same pan fry shallots and ginger until slightly crispy. Add the curry paste and coconut milk and simmer for 2 mins. Add mushrooms and cook for 2more mins and keep it aside. In a bowl mix tofu, cilantro, crispy fried onions and the above sauce. Squeeze in lime juice and zest. To make the potle take a spring roll sheet and place some of the above mixture and tie it using a chive. Place on a baking tary and bake for about 10mins at 180C or until golden brown in color.
