-Soak tamarind in a little water (not too much,can add water later if required) for !5-20 min.
- Peel and chop small onions into thick slices.
-Roast chillies on direct flame holding them by tongs. Hold them at a distance where they will roast and give out a spicy aroma and not burn, (i always feel like sneezing when the aroma comes so i know its ready,usually takes a couple of minutes).When u try to break the chilli it should be brittle and break easily, that means its perfect.
-Make the soaked tamarind to a paste like consistency using your fingers. (it should not be too watery,it should look like pulp).Remove all the seeds and strings of the tamarind.It should be a smooth pulp.
-To this tamarind add the chopped onions.
-Break the roasted chillies to small bits using your fingers,and add to the tamarind and onion mixture.
*(wear gloves if you are sensitive and be carefull not to touch your eyes or face,wash your hands with soap immediately after)
-now add sugar and salt to taste. it has to be a bit sweet to balance out the tamarind and chilli. Mix well (use your fingers to mix well if you are making this at home, it always tastes better that way or just use a spoon :)
