Ingredients used in Pumpkin Pachadi
• Pumpkin - 1 pound.
• Channa dal - 4 tablespoons.
• Red chilles - 10 numbers.
• Methi seeds - 1 teaspoons.
• Small onions cut into thin rings or a medium-sized onion chopped finely - 1 numbers.
• Green chillies, chopped finely - 5-6 numbers.
• Coriander - 1/4 bunch.
• Yoghurt, whisked - 1/2 cup.
• Lemon - 1 numbers.
• Tamarind (lemon size) - .
• Salt - to taste.
Method:
Method: For tempering/seasoning: Mustard seeds - 1 tbsp Jeera - 1 tbsp Urad dal - 1 tbsp Curry leaves Hing- a pinch Red chillies - broken 2 nos. Method: Cut the pumpkin into small pieces and fry them in 1 tbsp oil until golden brown. Remove and set aside. In the same pan, roast channa dal and red chillies along with methi seeds. Powder the channa dal and red chillies with methi seeds to a fine powder. To this mixture, add tamarind and grind. Finally add the fried pumpkin pieces and grind without any water. Do not make into a fine paste, but coarse grind the pumpkin pieces. Add salt accordingly. Now mix the finely chopped onions or the onion rings and green chillies along with lemon juice, you can add more lemon juice if required or according to your taste. Add the whisked yoghurt. Now add the tempering/seasoning to this chutney. Garnish with coriander leaves.
