Ingredients used in Sali Boti
• Mutton, cut into very small cubes - 1000 grams.
• Chopped tomatoes - 4 numbers.
• Finely chopped onions - 4-5 numbers.
• Chopped green chillies - 3-4 numbers.
• Ginger-garlic paste - 1 teaspoons.
• Chilli powder - 1/2 teaspoons.
• Turmeric powder - 1/2 teaspoons.
• Vinegar - 1 1/2 tablespoons.
• Jaggery - 1 1/2 tablespoons.
• Ghee or oil - 2-3 tablespoons.
• Water - 2 cup.
• Finely chopped coriander leaves - to taste.
• Salt - to taste.
• Potatoes - 6-7 large.
• Oil - to fry.
Method:
ÔÇó Take a pan and heat oil or ghee. ÔÇó Add onions and saute until golden. ÔÇó Add chilli powder, turmeric powder, and ginger-garlic paste. ÔÇó Stir for about one minute. ÔÇó Now add the mutton cubes and cook until the meat gets a light brown colour. ÔÇó Add chopped green chillies, tomatoes, water and salt as required, stir it. ÔÇó Bring it to a boil. ÔÇó Cook for 30-40 minutes over low heat. ÔÇó Mix jaggery and vinegar with it. ÔÇó Cook again for about 5-6 minutes. ÔÇó Remove it from the heat. ÔÇó Garnish it with chopped coriander leaves. ÔÇó Boti is ready. ÔÇó For Sali, cut 6-7 large potatoes into very thin straws. ÔÇó Soak them in chilled salty water for few minutes. ÔÇó Drain the water and dry the straws. ÔÇó Deep fry the straws in boiling ghee or oil, until golden brown. ÔÇó Remove excess oil from potato straws and serve with Boti.
