Ingredients used in Sarva Pindi with Indian Corn
• Corn kernels - 1 cup.
• Ginger pieces - 4 numbers.
• Cumin seeds - 1/2 tea spoon.
• Green chillies - 3 numbers.
• Rice flour - 1 cup.
• Salt - to taste.
• Onion - 1 numbers.
• Spring onions - 1 cup.
• Coriander leaves - 1 bunch.
• Carrot (grated) - 1 tablespoon.
• Oil - as required.
Method:
  • In a mixie blender, add in the regular corn kernels, few ginger pieces, cumin seeds, and green chilies. Blend all these ingredients into a smooth paste without adding any water.
  • Transfer the corn mixture to a mixing bowl. Add one small cup of rice flour, salt, chopped onions, spring onions, coriander leaves, and grated carrot. Mix all these ingredients to make the dough.
  • Take a non-stick pan, add a little oil. Divide the corn dough into 2 portions and with the one portion of dough spread evenly all over the pan. Make tiny holes in the center of the dough sheet and drizzle a little oil.
  • Cover the pan with a lid and cook it over a high flame for 2 minutes and then lower the flame and cook for 5 minutes.
  • Cook until the Sarva Pindi turns slightly golden in color.
  • Dish out the Sarva Pindi pancake and serve hot with plain curd and pickle.
