Ingredients used in SAUMON a la BRETONNE
• Fresh salmon - 1000 grams.
• Mushrooms - 6 numbers.
• Butter - 60 grams.
• Lime - 1/2 numbers.
• Parsley - 2-4 springs.
• Salt and pepper - to taste.

1.cook lobster in boiling salted water.

2.remove from shell and cut into 2.5cm. pieces.keep hot.

3.melt butter over hot water.add chopped parsley and lime juice,salt,pepper and cayenne.

4.thicken with egg yolks.

5.put mustared into a bowl. add sauce slowly,stirring all the time till it has a smooth creamy texture.keep it warm. lobster pieces in a hot serving dish.cover with sauce and decorate with slices of lemon and hard-boild egg.serve hot.
