Ingredients used in shami kababs
• Coriander leaves - handful .
• Mint - handful .
• Salt - to taste.
• Cloves - 4 .
• Ginger - 1 inch piece.
• Garlic - 6 .
• Green chillies - 2 .
• Onions - 2 .
• Cinnamon stick - 2 piece.
• Bayleaves - 1 .
• Cardamoms - 4 to 5 .
• Channa dal - 1 cup.
• Lamb mince - 500 grams.
• Black pepper corns - 7 to 8 .
• Full dried red chillies - 3 to 4 .
Method:
Soak dal for an hour.In a dish put mince,dal,1 onion sliced,chopped ginger in garlic let them be in big pieces it does not matter,all the full garam masala,full red chillies and a little water and salt let it come to a boil and put flame on med and let all the moisture dry out completely.cool. In a food processor grind the mixture DO NOT ADD ANY WATER. remove add to it 1 chopped onion,chopped mint, coriander and green chilles.Make in kabab shapes and shallow fry let one side become brown thn flip over and brown on the other side these will b soft whn u r friying so do not keep flipping.U can make these a day in advance also and reheat in micro wave.
