SNAKE GOURD BIRYANI

Ingredients used in SNAKE GOURD BIRYANI
• Snake gourd - 2 numbers.
• Mint leaves - 1 cup.
• Dry coconut - 10 pieces.
• Sesame seeds - 2 tablespoons.
• Peanuts - 1-1/2 tablespoon.
• Coriander powder - 1 tablespoon.
• Basmathi rice - 2 cups.
• Green chillies - 5-6 numbers.
• Salt - to taste.
• Oil - 3-4 tablespoons.
• Water - as required.
• Saffron colour - 1 pinch.
• Bay leaf - 1 number.
• Caraway seeds - 1/2 tea spoon.
• Mace - 1 number.
• Star anise - 1 number.
• Biryani flower - 1 number.
• Cloves - 4 numbers.
• Cardomom - 3 numbers.
• Cinnaman stick - 3 pieces.
• Ginger garlic paste - 1 tea spoon.
• Curd - 1 cup.
• Tamarind - 1 tablespoon.
• Jaggery - 1 tea spoon.
• Ghee - 1 tea spoon.
• Whole red chilies - 4 numbers.
• Fried onions - 3 tablespoons.
• Turmeric powder - 1/4 tea spoon.
Method:
  • Soak the basmati rice for at least 15 minutes.
  • In a pan add peanuts,dry coconut,androast it, after that add sesame seeds, tamarind, red chillies, jaggery, fried onions, mint, roast it and transfer into a mixie jar, to make a powder.
  • In this add coriander powder, salt (as pertaste), a little bit of water and mix it well.
  • Take the mixture stuff in the middle of snake gourd and keep it aside.
  • Let the water boil in a big pan, in this add oil,salt, basmati rice andcook it for 90%.
  • Now take another pan add oil, whole garam masala, green chillies, mint leaves, ginger garlic paste,turmeric powder, curd,stuffed snake gourd and cook it for some time.
  • After that add, 90% cooked rice, fried onions, saffron colour, and ghee, let it cook in a hot flame for 5minutes and let it simmer for 5minutes with a lid.

Now snake gourd biryani is ready to serve
