Ingredients used in Spicy mexican bean soup
• Red chilli flakes - 1 teaspoons.
• Red chilli powder - 1 tablespoons.
• Olive oil - 1 tablespoons.
• Garlic finely chopped - 1 clove.
• Onions finely chopped - 1/2 cup.
• Chopped zuccini, carrots, peas (any vegetable combination) - 1 cup.
• Tomato puree - 2 tablespoons.
• Tomatoes chopped - 1 numbers.
• Rajma (kidney beans) - 1 cup.
• Salt - 1 teaspoons.
• Dried herbs - thyme, oregano - 1/2 teaspoons.
• Cilantro (coriander) leaves finely chopped - 2 tablespoons.
• Cumin seeds - 1 teaspoons.
Method:
Soak the kidney beans overnight or for atleast 8 hrs. Pressure cook upto 2 whistles. Mash it a little after cooked. However, leave some whole beans for a good look and taste. Heat olive oil in a pan and add cumin seeds. When it crackes, add the onion and garlic and saute till onions are translucent. Add the chopped vegetables and saute for 2 minutes. Add some water and bring to a boil. Add the cilantro, tomatoes and tomato puree and red chilli powder. Simmer for 5 minutes. Now add the mashed beans and some more water according to the soup consistency desired. Season with salt to taste. Top it with dried crushed herbs and chilli flakes. Serve with a dollop of sour cream.
