Ingredients used in Spicy Tomato Chutney
• Golden raisins - 1/4 cup.
• Onions, diced - 2 numbers.
• Red wine vinegar - 1 cup.
• White sugar - 3/4 cup.
• Cloves garlic - 3 to taste.
• (1 inch) piece fresh ginger root - 1 to taste.
• Pounds ripe tomatoes - 4 pound.
• Mixed spice - 2 teaspoons.
• Chili powder - 1 teaspoons.
• Paprika - 1 to taste.
• Curry paste - 1 teaspoons.
Fill a saucepan with water, and bring to a boil. Place tomatoes in boiling water, and cook for 3 to 5 minutes, or until skins begin to crack and peel. Remove from water, cool, and peel. Season with mixed spice, chili powder, paprika, and curry paste. Simmer over medium heat until thick. Refrigerate until ready to use.
