Ingredients used in Spinach Rice
• Onion(1 chopped lengthwise) - 2 large.
• Urad dal - 2 teaspoons.
• Mustard seeds - 1 teaspoons.
• Garlic (flakes) - 4 numbers.
• Coconut - 1/2 cup.
• Coriander seeds - 2 tablespoons.
• Red chillies - 5 numbers.
• Spinach (finely chopped) - 2 cup.
• Basmati rice - 2 cup.
• Water - 3 cup.
• Ghee - 2 tablespoons.
• Coriander leaves - 1 to taste.
• Cashewnuts (roasted in ghee) - 15 to taste.
• Salt - 2 to taste.
Method:
Wash the Rice 2 or 3 times and soak it 15 min in 3 cups of water. Cook the Rice with little salt. Grind Coconut, Coriander seeds, Redchilles, Garlic, 1 Onion amp; Coriander leaves to a paste. Add 1 tbs oil in a pan. Add mustard seeds, urad dal, fry 1 onion until golden brown then add the spinach with it. Close and cook for 5 min. Once cooked add the ground paste amp; salt. Mix throughly. Add this to the cooked rice. Add ghee amp; mix well. Garnish with cashewnuts.
