The fresh spiny gourds are generally green in color and slowly change color when they get ripe from light green to yellow indicating they are over-ripen and taste bitter, hence they are often are cooked when fresh and green in color.
Recipe: Spiny Gourd Onion Tomato Fry
- Salt - to taste
- Onions - 2 nos
- Garlic, crushed - 5 cloves
- Cumin - ½ tsp
- Mustard - ¼ tsp
- Oil - 1 tbsp
- Spiny gourd - 200 gms
- Tomatoes - 2 nos
- Chilli pd - 1 tsp
- Cumin pd - ½ tsp
- Coriander pd - 1 tsp
- Coriander leaves - 1 bunch
- Firstly cut the spiny gourd (Aa Kakarakaya) and fry in hot oil and keep aside.
- Add little oil in the pan and when it gets hot, add mustard seeds. When they crackle, add cumin seeds, crushed garlic, slices of onions, salt and sauté for a minute.
- Add turmeric pd, chopped tomatoes, chilli pd, cumin pd, coriander pd and mix well for 2 minutes.
- And then add spiny gourd and cover the pan with a lid and allow cooking for some time.
- Finally garnish with coriander leaves and switch off the flame.
- Serve with roti, chapatti or rice.
