• Red bell pepper(big size) - 1 number.
• Extra virgin olive oil - 1 tablespoon.
• Pepper powder - 1 tea spoon.
• Basil powder - 1 tea spoon.
• Salt - to taste.
• Extra virgin coconut oil - 1 tablespoon.
• Garlic - 1/2 tea spoon.
• Tomato paste - 1/2 cup.
• Quinoa - 1 cup.
• Dessicated coconut - 1-2 tablespoons.
• Raisins - 8-10 numbers.
• Rice wine vinegar - 1/2 tea spoon.
• Coriander leaves(chopped) - 1 tablespoon.
• Cheese - 1/4 cup.
  • Soak the quinoa for 1 hour and half cook it for 3 minutes.
  • Cut the bell pepper into two half and remove the seeds later apply olive oil on inside and outside.
  • Sprinkle pepper powder, basil powder, salt and place in oil greased tray.
  • Place it in the oven at 200 degree centigrade for 10 minutes.
  • Heat extra virgin olive oil in a pan and add crushed garlic, dry basil crush, tomato paste, half cooked quinoa, little dessicated coconut and saute it.
  • To it add pepper powder, salt and saute it.
  • Add raisins, rice wine vinegar, coriander leaves, little cheese and saute the stuffing nicely.
  • Fill the bell pepper with stuffing mixture and top it with little dessicated coconut and cheese.
  • Place it in the oven for 15 minutes at 200 degree centigrade.

Now the stuffed bell peppers with quinoa is ready to serve.
