Ingredients used in Stuffed bitter gourd with sweet potato
• Red chilly powder - 1 teaspoons.
• Turmeric - 1/2 teaspoons.
• Coriander powder - 1/2 teaspoons.
• Cumin seeds - 1/2 teaspoons.
• Mustard seeds - 1/2 teaspoons.
• Green chillies - 4 .
• Onions - 1 .
• Sweet potato (not yams) - 2 lbs.
• Bitter gourd - 4 numbers.
• Salt - to taste.
• Oil - to fry.
• Amchur - 1/2 teaspoons.
• Ginger garlic paste - 1/2 teaspoons.
• Cilantro - .
Method:

First we need to remove the bitterness from the gourd. For this peel the bitter gourds, cut the head and tail of it and remove the seeds from them. Gourds should look like hollow cylinders. Rub the outer side of the gourd with salt and sprinkle little turmeric over them and let them stay for about 15 mins. In the mean time we will make the stuffing. Boil the sweet potatoes. We can either boil them with some salt and then peel and slice them or we can peel them then slice and microwave them with little salt for about 6-7 mins. Mash the boiled sweet potatoes. Heat oil in a pan. Add cumin and mustard seeds. Add onions and split green chillies too. Sauteacute; them. Add turmeric powder and red chilly powder. Once onions are soft add ginger garlic paste and amchur powder. Add the boiled sweet potatoes to this and let it cook for about 5 mins. Add salt accordingly. Add some coriander powder, cilantro and let the mixture cool. Now the salted bitter gourds tend to become watery. Carefully squeeze the water from the gourds. Cut the gourds into around 3 inches pieces. Insert the stuffing into the hollow cylindrical pieces of bitter gourd. Take some oil for stir frying the stuffed bitter gourds. Fry till the gourd turn reddish brown in color. Garnish with cilantro.
