Ingredients used in sufaid Murgh
• Chicken breasts - 1 kg.
• Onions - 350 grams.
• Green chilies - 4 numbers.
• Garlic - 2 teaspoons.
• Ginger - 2 teaspoons.
• Green cardamoms - 4 numbers.
• Cloves - 5 numbers.
• Bay leaves - 2 numbers.
• Cashew nuts - 50 grams.
• Almonds - 50 grams.
• Nutmeg powder - half tea spoon.
• Mace powder - half tea spoon.
• Poppy seeds - half tea spoon.
• Yogurt - 150 grams.
• Ghee - 4 tablespoons.
  • Soak the poppy seeds in water for 1 hour, then drain off the water and grind into a fine paste.
  • Hang the yogurt in a cheesecloth for 1 hour to drain off the whey, then place the hung yogurt in a bowl and whisk.
  • Heat ghee or cooking oil in a cooking pot; add almonds, cashews and bay leaves and saute for about 2-3minutes.
  • Then add onions saute ituntil they are translucent and golden brown.
  • Now add green chillies, cardamoms and poppy seeds paste and cook for 3 to 4 minutes. Add water and cook for another 10 minutes. Remove from heat, discard the bay leaf and allow to cool.
  • Put the mixture in a blender and puree to a smooth paste without any grains.
  • In another pan heat ghee, add garlic, ginger, whole green chilli, cloves and saute it. After 1 minute add in the chicken pieces. The chicken will gradually release its juices. Cook it until the meat is almost dry.
  • Lower the heat then add yogurt and stir continuously to prevent it from curdling. Add in the ground spice mixture with the nutmeg, mace and salt to taste. Stir well and add hot water.
  • Cook over a low heat for about 30 minutes or until the chicken is tender.

Serve it hot with Breads or Rice.
