Ingredients used in sukka aloo methi -1
• Methi leaves(finely chopped) - 1/2 cup.
• Potatoes(pieces) - 250 grams.
• Salt - to taste.
• Turmeric powder - 1 tea spoon.
• Oil - 2-3 tablespoons.
• Onions(finely chopped) - 1 number.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Red chilli powder - 1 tea spoon.
• Garam masala powder - pinch.
• Amchur powder - 1/4 tea spoon.
• Lemon juice - 1/2 piece.
Method:
  • Heat some oil in a kadai and when it becomes hot, add finely chopped methi leaves and fry well. Add some salt, turmeric powder and mix well.
  • When the methi leaves are nicely fried and crispy, add some finely chopped onions, coriander powder, cumin powder, red chilli powder and pinch of garam masala powder.
  • Add small pieces of potatoes and sauté well. Add amchur powder and mix well. Cover the pan with an lid and allow cooking for 7-8 minutes.
  • Keep stirring in between. Add little lime juice, mix well.
  • Switch off the flame once they are fried nicely.

Serve with roti, chapatti, phulka or rice.

Aloo being the most favorite vegetable among kids would love eating this dry fry curry. Kids generally hate eating green leafy vegetable especially methi or fenugreek leaves. This would be one of the best variations to include healthy leafy vegetables in their diet. Potato is a popular vegetable worldwide and also a versatile tuber used in most chaat items. Potato flavour result from the combination of taste, texture and aroma. It complements with any type of vegetable or meats.

Methi is a very popular green herb which is also commonly known as fenugreek leaves in English, menthya in Kannada, menthe akulu in Telugu. They are used in making a lot of dishes in India. Some of the popular dishes prepared in Indian cuisine are Methi Chicken, Methi Chaman etc.
