Ingredients used in Tavsali (Cucumber Cake)
• Green cardmom powder - 1/2 teaspoons.
• Dates (khajur) cut into small pieces - 8 -10 numbers.
• Fresh grated coconut - 1//2 cup.
• Sooji (semolina - fine) - 1 1/2 cup.
• Jaggery (crushed) - 2 cup.
• Cucumber (grated) - 2 big.
• Ghee for greasing the pan - .
• Pinch of salt - .
• Baking powder - 4 teaspoons.
Method:

Mix well the grated cucumber and jaggery untill all the jaggery disolves. Add semolina gradually so that the consistency of the batter is cake like. (should not be too THICK) Add salt, dates, cardmom powder, baking powder and coconut. Grease a pan with ghee and preheat the oven to 400 F. Add the mixture to the pan and set it in the pre heated oven for about 40 minutes or till a knife inserted comes out clean. Serve hot with ghee.
