Ingredients used in THAKKALI TOMATO PICKLE-2
• Red colour ripened tomatoes - 500 grams.
• Onion - 1 numbers.
• Garlic cloves - 12 clove.
• Cloves - 2 numbers.
• Turmeric powder - 1/2 teaspoons.
• Fenugreek seeds powder - 1/4 teaspoons.
• Mint leaves - 1/2 bunch.
• Ginger - 1 piece.
• Red chili powder - 1 teaspoons.
• Coriander powder - 1 teaspoons.
• Oil - 2 tablespoons.
• Salt - 0 to taste.
• Green chilies - 7 numbers.
• Ghee - 1 tablespoons.
• Mustard seeds - 1 tablespoons.
• Urad dal - 1 tablespoons.
• Cumin seeds - 1 tablespoons.
• Cinnamon - 1/2 piece.
• Curry leaves - 1 springs.
• Coriander leaves - 1 bunch.
Method:

1. Take washed and finely chopped tomatoes and then to this add finely chopped onions and garlic cloves. 2. Then add ginger, mint leaves, fenugreek seeds powder, turmeric powder, salt and oil. 3. Heat oil in pan then add cloves when it splutters then add onions, salt slightly saute it. 4. Now add garlic cloves, green chillies, ginger, mint leaves, red chilli powder, coriander powder and mix it. Now add chopped tomatoes. 5. To this add 3 cups of water and mix it again and close it with a lid. 6. Boil it till water evaporates completely and now mix it, then transfer into other plate by removing from flame. 7. When it cools down grind them and make a thick paste of it. 8. Heat oil in pan add ghee, oil, cloves, cinnamon and when it crackles then add mustard seeds, and cumin seeds. 9. Now add finely chopped onions and saute it till it comes to golden colour, then add curry leaves and mix it. 10. Then add grinded paste of tomatoes (thakkali) 11. Then saute it and switch off the flame 12. Transfer this into a plate and garnish it with finely chopped coriander. 13. We can serve this dish with roti's, rice, dosa, appam which tastes good.
