Ingredients used in Tortilla Soup - Mexican
• Dried basil leaves (optional) - 1/2 tablespoons.
• Dried parsley - 2 tablespoons.
• Oregano - 1.5 tablespoons.
• Italian seasoning - 1.5 tablespoons.
• Taco bell - 3/4 - 1 cup.
• Crushed fresh jalapenos (or more...as per taste) - 2 - 2.5 numbers.
• Boiled black beans - 1/2 cup.
• Boiled pinto beans - 1/2 cup.
• Boiled red kidney beans - 1/2 cup.
• Corn (canned or frozen) - 1 cup.
• Finely chopped bell pepper - 1 cup.
• Olive oil (2 tbsp), sugar, salt - 0 to taste.
• Thin white corn chips and cheese (for serving) - 0 to taste.
Method:
1) Take 2 tbsp of olive oil in a big sauce pan and sauteacute; corn and finely chopped bell peppers. 2) Once the vegetables are cooked add approximately 6 bowls (soup bowls ~ 18 oz. each) of water. 3) Now, add all the beans and the seasonings and salt. 4) Let the mixture boil for about 20-25 mins or until you smell the flavor of the soup 5) Once you smell the flavor, add hunt#39;s sauce, and little bit of sugar (if necessary) to neutralize the sour taste of the soup. 6) Add crushed jalapentilde;os to the soup as per your taste. 7) Add Taco Bell sauce (do not substitute it for taco seasoning or taco sauce...or your recipe will have to go down the drain!!)
