Ingredients used in Traditional Kerala Sambar!!!
• Cumin seeds(jeera) optional - a pinch.
• Red chillies for grinding - 4 or 5 numbers.
• Corriander powder - 2 teaspoons.
• Red chilli powder - 1 teaspoons.
• Coconut grated - 1 cup.
• Shallots( cheriya ulli) for grinding - 3 numbers.
• Shallots(cheriya ulli) for cooking - 7 numbers.
• Tomato - 1 numbers.
• Potato - 1 numbers.
• Drumstick - 1 numbers.
• Salt - to taste.
• Turmeric powder - 1/2th teaspoons.
• Cooking oil(coconut oil preferred) - 4 teaspoons.
• Asafatoeda(hing) - 1/4th teaspoons.
• Tamarind juice( half lime size of tamarind soaked in 1/2 cup of water) - 1/2th cup.
• Tur dal( thuvara parippu) - 3/4th cup.
• Mustard seeds(kaduku) - 1/4th teaspoons.
• Fenugreek seeds(uluva) - 1/4th teaspoons.
• Urad dal (uzhunnu parippu) - 1/2th teaspoons.
• Red chillies for seasoning - 2 numbers.
• Curry leaves(kariveppila) or corriander leaves - 10 or 15 leaf.
• Water - as required .

Method of cooking: 1. Cook tur dal by adding turmeric powder, hing and a bit of salt with enough water ina pressure cooker for about 4 whistles or until dal is completely cooked. 2. Simultaneously, half boil the vegetables( Drumstick, potato, shallots 7 in number) in another vessel with sufficient water to get cooked.Do not add tomato now. 3. Heat 2 tsp of oil in a frying pan. Fry the shallots(3 in number) and grated coconut till the coconut turns brown in colour. Now add red chilli powder, corriander powder and cumin seeds. Again fry for about 2 minutes. Now grind this fried mixture into fine paste. 4.Once dal is completely cooked mix these half boiled vegetables to dal. Now add tomato and salt as required. Boil it with enough water with the lid closed. Wait for 3 minutes. 5. Add tamarind juice and make it to boil without closing the lid. Slightly increase the flame. 6. Once fully boiled add the grinded mixture. 7. Now, reduce the flame slightly and boil it for 2 minutes. 8. Heat 2tsp of oil in a frying pan and add the seasonings(mustard seeds, fenugreek seeds, urad dal, curry leaves amp; red chillies). 9. Finally, add these seasonings into the boiled mixture. 10. The traditional kerala sambar is now ready to serve.
