Ingredients used in Ulavacharu Kodi Biryani
• Black gram and horse gram soup - 1 cup.
• Water - as required.
• Salt - to taste.
• Oil - as required.
• Basmathi rice - 1 cup.
• Oil - as required.
• Caraway seeds - 1 tea spoon.
• Bay leaf - 1 number.
• Cardamom - 2 numbers.
• Cloves - 3 numbers.
• Biryani flower - 1 number.
• Maze - 1 number.
• Star-anise - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Mint leaves - 1/2 bunch.
• Green chilies - 3 numbers.
• Coriander leaves - 1/2 bunch.
• Turmeric powder - 1 tea spoon.
• Chicken - 1 cup.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Garam masala powder - 1 tea spoon.
• Brown onions - 1/2 cup.
• Saffron water - 1 tea spoon.
• Ghee - 1 tablespoon.
Method:
  • In a pan and water, salt oil, basmati and cook it till 80% done.
  • Take a pan and add oil, caraway seeds, bay leaf, maze, biryani flower, star anise, cardamom, cloves, ginger garlic paste and saute it well.
  • Now add mint leaves, green chilies, coriander leaves, turmeric powder, chicken and cook it.
  • In a horse gram and black gram, soup add red chili powder, coriander powder, cumin powder, garam masala powder, brown onions and mix it well and add it into a chicken cooking pan and cook it for 10 to 15 minutes.
  • Now add cooked rice, saffron, ghee and cook it for 10 minutes.

Serve it hot with raitha.
