Ingredients used in Ulundhan kali
• Ulundhu ( white round gram) - 3/4 cup.
• Raw rice - 1 cup.
• Jaggery - 1 or more cup.
• Dry ginger - 2 pinch.
• Cardamom regular - 4 piece.
• Salt - 1 pinch.
• Water to melt jaggery - 2 cup.
• Ghee ( required) - 1 cup.
Dry roast ulundhu and raw rice separately and grind it to a fine powder, sieve it together and keep it aside. In a vessel add jaggery and cardamom in water and boil it tell the jaggery melts and strain it. It a karai add the jaggery water (half of it)dry ginger and salt and slowly add the raw rice and ulundhu powder. Simmer the fire while adding the powder and thereafter.Add the remaining jaggery water and stir continuously.add ghee little by little. The mixture will come out thick like Kali. Remove from fire and give it a final stir. Rub ghee in palms and make giant balls. Server a Kali in the plate make a hole in the middle of the Kali pour melted ghee and enjoy.
