Ingredients used in Vegetarian Chili
• Olive oil - 1 teaspoons.
• Chopped onion - 1. 1/2 cup.
• Chopped green bell pepper - 1. 1/2 cup.
• Chopped celery - 1 cup.
• Pinto beans, un-drained - 2 can.
• Diced tomatoes - 2 can.
• Hunt's tomato paste - 1 numbers.
• Water - 1 cup.
• Chopped fresh mushrooms - 1 cup.
• Jalapeno pepper, seeded and chopped - 1 numbers.
• Chili powder - 1 tablespoons.
• Ground cumin - 1-1/2 teaspoons.
• Dried oregano, crushed - 1 teaspoons.
• Pepper - 1/2 teaspoons.
• Pkg. tofu, drained, cut into small cubes - 1 oz.
Method:
  1. Coat a Dutch oven with cooking spray; add oil and place over medium heat until hot.
  2. Add onion, green pepper and celery; sauteacute; for five minutes, or until onion is tender.
  3. Add beans and remaining ingredients, except tofu. Bring to a boil. Cover; reduce heat and simmer 30 minutes.
  4. Add tofu; stir gently. Cover and simmer 10 additional minutes.
