WARQUI ROTI AND PAPAYA PLASTIC CHUTNEY

Ingredients used in WARQUI ROTI AND PAPAYA PLASTIC CHUTNEY
• Flour - 1 cup.
• Salt - to taste.
• Sugar - 3-4 tablespoons.
• Lime juice - 4 teaspoons.
• Saffron water - 2 teaspoons.
• Milk - 5 teaspoons.
• Raw papaya - 1/2 number.
• Butter - 2 teaspoons.
• Raisins - 10 numbers.
• Nigella seeds - 1 tea spoon.
• Oil - 8-10 tablespoons.
Method:
  • Take a bowl add flour, salt, sugar, lemon juice, saffron, milk then make it a dough and rest it.
  • Take raw papaya cut into thin slices then cut into pieces.
  • In a pan add water, papaya pieces, pinch salt and sugar.
  • Boil it for 20-25 minutes which becomes like chutney called as plastic chutney.
  • Take the dough make it like a big chapati and apply butter to it.
  • Firstly fold it then start rolling it and cut into pieces.
  • Then layer it one on top of it.
  • 3-4 layers of it which forms like one particular dough.
  • Repeat the same process for rest also.
  • In boiling mixture i.e. plastic chutney add lemon juice, raisins and leave it.
  • Now take the dough and start rolling it to 4-5 inches.
  • In a pan add nigella seeds and roast it.
  • Once the chutney is ready transfer these roasted into the plastic chutney and cook it.
  • Take a pan add oil and shallow fry the roti.
  • Repeat the same process for other roti's also.
  • Place the roti in serving plate and add plastic chutney on top of it.

New the warqui roti and papaya plastic chutney is ready to serve.
