Beetroot Fry with peanuts

Description

This is a simple beetroot fry with peanuts, my family loves it. Beets are highly nutritious.

Clean the beets and peel them. Cut them into 2 parts or 4 depending on size. Microwave the beets for 4-5 mins or boil them in a vessel till they are soft. This boiling makes cutting the beets easier. When the beets are soft, cut them into small pieces. Fry peanuts until they are crunchy. I microwave them for a minute instead of using oil. Take a vessel and add some oil. When oil is hot, add mustard seeds, and when they crackle, add cumin seeds. Add urad dal, chana dal, curry leaves and fry them for a minute. Add chopped onions and green chillies. Add salt and turmeric powder.When onions turn brown , add the chopped beets and fry them on medium flame. When beets are almost done, add roasted peanuts and turn off the flame when the beets are done. Garnish with chopped cilantro.
