Bendakaya-Vankaya Pulusu. Pulusu is a tangy stew usually made in Andhra homes.
- Heat oil in a pan, add ladys fingers, fry them and keep aside.
- In a same pan fry brinjal and keep aside.
- Heat a pan add oil, mustard seeds, garlic, dry red chillies, chopped onion, salt, curry leaves, turmeric powder and sauté it till they turn light brown in color.
- Add chopped tomatoes and cook it well.
- Then add tamarind pulp, red chili powder, water and cook it with closed lid.
- Now add fried brinjal, ladys finger and cook it.
- At last add coconut milk, coriander leaves and switch off the flame.
Bendakaya Vankaya Pulusu is now ready to serve.
