Description

A great fast soup, made cheap and easy and tastes great. My mom got this recipe back in the 80s from a check out counter magazine and added a few things to it, I hope y like it.One large soup pot, add oil and cook onions, bell pepper, and garlic and cook till good and brown. Add chicken and Fajita spices with canned jalepeno juice to taste (I use 1/4 cup maybe a little more) cook forthree to five minutes to stir around the sauce. Add two cans of salsa fill both empty cans with chicken broth and add to soup. Boil soup careful not to over cook the chicken. Last add the coriander to taste I use a large handful chopped course. *When I cook the chicken I keep it pink in the middle as the boiling of the soup will cook it through, and when the chicken is just right the soup is done. Then pour soup into a bowl, Add cheese tortilla chips sour cream avacado canned Jalepenos and lime to garnish *and goes with the tequilla.* you can also use pork, or just take out the meat entirly use a few more veggies like potatoes or yuca. goes great with a shot of tequilla,cold coronas and warm friends. -Ian
