Description

Spaghetti in a rich egg sauce with cheese and Italian cured bacon.

Serves 2 Cook the pasta according to the instructions. In the meantime, fry the guanciale in a hot pan until crispy. You will not need any oil, as guanciale is VERY fatty. While doing that, mix the egg and the egg yolk in a bowl and add the cheeses until you have a glue-like paste. Add cream if using. You might not need any salt, as the cheeses are already very salty. Add a generous amount of pepper, which works very well with the flavors in this sauce. Take the pan off the heat. When the pasta is cooked, add one ladle of cooking water to the pan with the guanciale, drain the pasta and immediately, reserving some of the cooking water and add it to the pan. Add the egg mixture to the pan and mix everything together. Add more cooking water, if the sauce is too dry. Add pepper and cheese to taste. Remember to work very quickly lest you cook the egg in the sauce. Serve immediately with a generous sprinkle of cheese. Buon appetito!
