Beetroot curry is a simple and delicious dish popularly made in the South India. This delicious recipe is made with diced beetroot cooked with buttermilk spiced with dry red chillies and seasoned with little mustard seeds, curry leaves and asafetida

• Heat the oil in a pan, add mustard seeds, red chilies, curry leaves and saute it till mustard seeds crakle.
• Then add beetroot and salt to taste. Cook with closed lid for about 4 minutes.
• In the same pan, add buttermilk, water, hing and mix it well. Stir fir on a low flame for another 2-3 minutes.

Eat with plain rice.
