Drumstick and bitter melon curry is an authentic dish prepared with drumstick and tamarind juice. It is good for the diabetic patient.
- Take a bowl, add bitter gourd, turmeric powder, salt and mix nicely later allow it rest for 30 minutes.
- Heat oil in a pan, add onions, curry leaves, salt and saute it.
- Add ginger garlic paste, turmeric powder, drumstick and saute it, later cook it on slow flame.
- Squeeze water from bitter melon and add to above pan and mix it.
- Add red chilly powder, cumin powder, coriander powder and saute it, cook for 4 minutes on slow flame with lid on it.
- Remove lid, add water and cook again for 2 minutes with the lid on it.
- Remove lid, add little jaggery, tamarind juice, fenugreek powder and cook it on high flame with lid on it.
- Check for the season and adjust salt and red chilly powder.
- Again cook for 8 minutes with the lid on it. Transfer to a serving plate and garnish with coriander leaves.
Now drumstick and bitter melon curry are ready to serve.
