A simple instant breakfast dish made with bread crumb, semolina suji and buttermilk. Bread Uttappam is an instant, yummy, soft and appetizing Indian savory pancake with distinctive taste on bite. This is a very simple breakfast dish made with bread added with all-purpose flour and semolina combined and ground to paste along with buttermilk topped with few spicy and flavorful seasonings.


 


The uttappam is topped with the sweetness of onions, spiciness of green chillies, earthy flavors from coriander leaves and ginger zest. The slight crunchy feel acquired from the bread crumbs and softness of the uttapam from the all-purpose flour and semolina is truly exceptional and extraordinaire. The outer part is crispy like the dosa while inner soft like the idlis. There are various ways and variations in making the bread uttappam, but this recipe is one of the most simple, easy to prepare and scrumptious dish to taste.


 


Recipe:  Bread Uttappam


 


Ingredients:



  1. Bread slices                                        -       6 nos

  2. Baking pd or cooking soda            -       pinch

  3. Semolina                                             -       ½ cup

  4. All-purpose flour                              -       ½ cup

  5. Water                                                   -       ½ cup

  6. Buttermilk                                          -       1 cup

  7. Salt                                                       -       to taste

  8. Onions, finely chopped                  -       1 no

  9. Ginger, finely chopped                   -       1 piece

  10. Green chillies, finely chopped      -       2-3 nos

  11. Coriander leaves, chopped            -       1 bunch


 



  1. Cut the edges of the bread slices and grind in a blender to make bread crumbs. Add the white portion of the bread and blender to make powder. Add this with the bread crumb mixture and mix well.

  2. In the mixie blender, add semolina, all-purpose flour (maida), water, buttermilk, salt and grind to make batter.

  3. Add pinch of baking powder or cooking soda in the bread crumb mixture and mix well.

  4. Heat a hot griddle and add some batter in  the bread crumb, mix and pour a ladle full of batter on the griddle or tawa.

  5. Spread the mixture in circular motion. Drizzle some oil on the sides and over the uttappam.

  6. Sprinkle some onions, ginger, green chilli and coriander mix. Cover and cook the bread uttappam on both sides until done.

  7. Serve hot with any chutney of your choice.
