This bread pudding is more of an Indianised simple and easy method where most of the ingredients are available at home. To make Bread Pudding cut the bread slices into medium sized cubes and the choice of whether to remove the bread crusts is yours. The cubes of bread are then placed in a baking pan. Then we need to make the custard which is then poured over the bread cubes.
Take some warm milk in a bowl add butter into it and slightly mix it so that the butter would get melted. Mix custard powder in a small bowl and mix it into this mixture. The custard powder mix would give a nice consistency and texture to the pudding.
You can also prepare the pudding without custard powder. In another bowl, take eggs, add cinnamon powder, vanilla essence and sugar, beat well. Add the milk mixture into this egg mixture and mix well. Take a baking bowl, spread the cut bread pieces, sprinkle raisins some brown sugar or jaggery and pour the milk-egg mixture and spread well, place another layer of bread and pour the milk-egg mixture.
Make sure that all the bread pieces are soaked well in the milk-egg mixture. Bake the pudding at about 340 to 350o F for 45 to 50 mins. Vah! The pudding will have a golden colour on the top layer. A really yummy awesome dessert! Kids would really love it a lot.
You can add chopped nuts, pieces of chocolate, lemon or orange zest, a little alcohol, candied, dried or even fresh fruits like apples and bananas to the pudding for more flavor and texture. Bread pudding can be served warm or cold with a dusting of confectioners' sugar and a dollop of softly whipped cream or vanilla ice cream.
