Button Mushrooms Button mushroom are also commonly known as white mushrooms which are readily available in most supermarkets. These white mushrooms have a mild, earthy flavour. Though their flavours are pleasantly subtle when raw, their flavours intensify and absorb the spices around as they are cooked. These mushrooms are generally available year round but are at their peak in fall and winter.  Bigger variety of button mushrooms are generally left whole and stuffed for making an appetizer or side dish.


Mushrooms are versatile ingredient available in a huge variety of sizes, shapes and colours. They can range from smooth and silky to pitted and honeycomb like. Mushrooms also known as puttagodugulu in Telugu, generally the cultivated white mushrooms are mild in flavours and goes well in dishes from pastas to soups to stir fries. Mushrooms have been used for thousands of years both as food and for medicinal purposes. They are often classified as a vegetable or herb, but they are actually fungi. Today, button mushrooms are enjoyed for their flavour and texture.


The texture of the button mushroom is spongy and bit rubbery. As the white button mushrooms have high water content, browning them would be a bit difficult. They are very absorbent and clinch seasonings well. With a bit of gentle sautéing or stir frying, you could make tasty and delectable stir-fry mushrooms. Sautéing produces a browned, flavourful outer layer. They can impart their own flavours to food or take on the flavour of other ingredients.


Their flavour normally intensifies during cooking, and their texture holds up well to usual cooking methods, including stir-frying and sautéing. They also add an appealing touch to vegetable-based casseroles and stews. Mushroom are quiet popular as they contain 90 percent water and have few calories. They are cholesterol free and the fat and carbohydrate content is just minimal. Mushrooms are rich in protein and contain vitamins such as B, C and D, while a few contain vitamin A. Be aware that some of the vitamin values are destroyed during the cooking process.


How to prepare Mushroom Manchurian:



Ingredients:



  1. Mushrooms – 6 to 7 nos

  2. Garlic, finely chopped – 4-5 cloves

  3. Ginger, finely chopped – ½ tsp

  4. Soya sauce – ¼ tsp

  5. Vinegar – ½ tsp

  6. Tomato ketchup – ½ tsp

  7. Tasting salt – pinch

  8. Salt – to taste

  9. Sugar – pinch

  10. Spring onions, finely chopped – 1 tbsp

  11. Onions, finely chopped – 1 small

  12. Pressed rice, soaked & drained – 2 tbsp

  13. Maida – 1 tsp

  14. Oil – 1 tsp

  15. Bread crumbs – ½ cup

  16. Eggs – 2 nos


Directions:


Finely cut the stem of mushrooms and keep aside. In a bowl, add in some finely chopped garlic, ginger, soya sauce, vinegar, tomato ketchup, tasting salt and sugar. Mix all the ingredients well.


Dip the mushrooms into this mixture and coat them well. In the bowl, add some vinegar, ketchup, green part of spring onions, onion, stem of mushrooms, soaked pressed rice or boiled potatoes, sugar, salt to taste, soya sauce, maida. Mix and make into a dough type of mixture.


Stuff this mixture into the mushrooms. In a plate add 1 tsp of oil in bread crumbs and mix well. Beat an egg and keep aside. Take a piece of stuffed mushroom, coat it in the flour, dip in the egg mixture and then in crumb mixture and keep aside.


Preheat the air fryer at 200 degree C for 5 minutes. Pull out the basket and place the mushrooms inside the fryer. Close and fry the mushroom for about 8 minutes. Remove and serve hot. Mushrooms have significantly become quite important food due to their nutritive and medicinal values.
