This is a rustic Indian kebab made with Desi kala channa (Bengal gram ) which is stuffed with paneer and can be shallow fried or air fried Desi Channa Paneer Tikkis are extremely delicious and nutritious vegetarian rustic Indian Kebabs made with desi kala chana (brown variety of Bengal gram) which is boiled mixed with few spices, fresh coriander leaves, ginger & garlic flavor and roasted chana dal powder making into attractive kebabs stuffed with yummy subtly spiced paneer and cheese mixture which gives a soft and bursting flow on bite.


These air fried desi channa paneer tikkis are highly nutritious and retains all its vitamins and minerals along with offering a luscious and delectable taste to delight your palate. There are highly light to eat, comforting and wholesome snacks that can be eaten with freshly made aromatic mint chutney or any sauce of your choice.


Recipe:  Desi Channa Paneer Tikki – Airfryer Recipe



Ingredients:



  1. Desi Channa Dal (brown chana)                              -       1 cup

  2. Salt                                                                                     -       to taste

  3. Chana masala                                                                 -       ½ tsp

  4. Green chillies                                                                  -       2 nos

  5. Ginger & Garlic                                                              -       ½ tsp

  6. Coriander, chopped                                                      -       1 cup

  7. Roasted Chana dal powder                                        -       1 tsp

  8. Paneer, grated                                                               -       1 cup

  9. Cheese, grated                                                               -       ¼ cup

  10. Chilli flakes                                                                   -       ½ tsp

  11. All-purpose flour & cornstarch mixture                 -       ¼ cup

  12. Bread crumbs                                                                -       1 cup

  13. Oil for basting                                                              -       2 tsp


Directions:



  1. For making kebabs: Take some desi brown chana and soak in water (overnight). Boil add little salt until nice and soft. Drain the water and keep aside.

  2. Add the boiled channa into a blender and grind to coarse powder without adding water. Transfer the mixture into a mixing bowl.

  3. Add chana masala, finely chopped green chillies, ginger & garlic, coriander leaves, roasted chana dal powder and little water and combine all ingredients to make it look like a dough.

  4. Take small amounts of the chana dough and convert them into kebabs (they should be 3 times the size of paneer dumplings) and keep aside.

  5. For the inner stuffing: In a mixing bowl, add grated paneer, cheese, chilli flakes and little salt and mix well. Make into small dumplings and keep aside.

  6. Take one chana kebab and flatten them with your finger, stuff the paneer dumpling and seal the edges well. Flatten and shape well.

  7. In a bowl, combine all-purpose flour and cornstarch adding little water to make a thick paste.

  8. Dip the kebabs in the flour paste and then coat well with bread crumbs and keep aside. Repeat with all the remaining kebabs and keep aside.

  9. Preheat the air fryer at 180 degree C for 4 minutes. Remove the basket and place the kebabs and air fry for 4 minutes.

  10. After 4 minutes, pull out the basket and brush the kebabs with little oil and close.

  11. Air fry again for another 5 to 6 minutes.

  12. Serve hot with mint chutney or any sauce.


The Desi channa is also commonly known as kala channa or kadala or black channa. This variety of Bengal gram is a very popular dish in northern India especially Punjab region. It is all time favorite to many for its rich source in proteins and fiber and gives energy. Kala chana or the black chickpeas is a smaller, darker variety of chickpeas grown mostly in the Indian subcontinent, Ethiopia, Mexico and Iran. It is one of the earliest forms since it closely resembles seeds found both on archaeological sites and the wild plant ancestor of domesticated chickpeas (Cicer reticulatum) which only grows in southeast Turkey, where it is believed to have originated.


Desi chickpeas have markedly higher fiber content than Kabulis and hence a very low glycemic index which may make them suitable for people with blood sugar problems. The desi type is used to make Chana Dal, which is a split chickpea with the skin removed. This particular preparation of Black channa cooked with paneer and cheese kebabs have some fantastic flavors from the fresh herbs like the coriander and spiciness from green chillies and chana masala powder. As the boiled black channa is bland and nutty to taste; when cooked with aromatic Indian spices makes it give a distinct flavor and a satisfying meal to crave for.


Black channa can be cooked in many ways. In Kerala the kadala curry made of black channa is a popular dish that goes well with puttu, appam and rice. They are also boiled with little salt and added to salad or eaten boiled with some finely chopped raw onion, spices, freshly chopped coriander leaves and zest of lime to make it tangy.
